Thai Green Prawn Curry with Rice
Serves 4
Ingredients:
400g Raw King Prawns
100g (2 packs of Sharwoods) Thai Green Curry Paste
2 Banana Shallots or 6 small Shallots (finely chopped)
400ml Can of Coconut milk (can use half fat)
2 Ripe bananas
200g Basmati rice or Thai Jasmine rice
Pinch of Salt
Little Olive Oil
Method:
Bring a pan of water to the boil. Add the wine and a pinch of salt. Cook as per the packet instructions but undercook rather than over. Remove from the heat and drain. Fluff with a fork and cover with a tea towel to absorb the steam.
To make the curry, fry the shallots until softened. Add the curry paste and fry over a low heat for a couple of minutes.
Add the coconut milk and simmer until thickened. Add the prawns and simmer gently until cooked through.
Slice the bananas diagonally.
Serve in a gratin oval dish. Make a border with the rice. Place bananas around the rice, spoon the curry into the centre.
