Recipe of the Month - January

 

Savoury Minced Pork with Lettuce Cups


Serves 4
Ingredients:
225g iceberg lettuce
1 ½ tbsp sunflower oil
3 tbsp coarsely chopped garlic
3 tbsp finely sliced spring onions
2 carrots finely chopped
25g Chinese dried mushrooms, soaked in hot water
2 small fresh red or green Thai chillies, seeded and finely chopped
450g lean minced pork
2 tbsp fish sauce
1tsp shrimp paste
1tbsp soy sauce
1tsp sesame oil

Method:
Separate and wash the lettuce leaves, dry and refrigerate.
Heat a wok or large frying pan over high heat until it is hot. Add the sunflower oil, garlic and chillies and stir-fry for 2 minutes. Then add the pork and continue to stir-fry for 3 minutes. Add the fish sauce, shrimp paste and stir-fry for a further 3 minutes.
Finally add the spring onions, soy sauce and sesame oil and stir-fry for another minute.
Arrange the lettuce and meat in separate dishes. Place a little of the meat mixture onto each lettuce leaf and roll into a parcel.
